Overview
100% Coombe Vineyard Mataro from the Waite Campus. Fermented, blended and alcohol carefully removed, through Spinning Cone and Reverse Osmosis technologies, to retain purity of aroma and flavours. Mid Mataro was inspired by the research and development into new no and low alcohol wines in South Australia. In 2023, a No and Lo Alcohol New Product Development Research Facility was opened supported by the State Government of South Australia and the Australian Wine Research Institute.
Handpicked. Sorted and destemmed. Fermentation in a combination of small open fermenters with twice daily hand plunging. Matured in French oak barriques for six months. Post fermentation the base wine was filtered through the Spinning Cone with a small component of the blend undergoing Reverse osmosis filtration. Through very gentle handling, these components are masterfully blending back into the original parcel of wine to arrive at a well-integrated, lighter finished ABV.
Mid Mataro, a mid-strength wine with only 8% alcohol by volume, has aromas of plum, dark cherries and spice. The palate is lively with core of supple red berries enhanced with hallmark savoury notes. Bright acidity and fine tannins provide definition and body.
